Vynikajucé recepty na paradajky

Sýta kuracia polievka s ryžou a cuketami
Výdatná polievka, ktorá perfektne poslúži ako hlavný chod či večera.
Príprava 10min Úprava 40min Porcie 6 INGREDIENCIE 2 PL olivový olej 1 ks cibuľa 3 strúčiky cesnak 2 PL paradajkový pretlak 2 ks malé cukety 1 konzerva lúpané paradajky 2 ks kuracie prsia 1 liter kurací vývar (bujón) 250 ml vriaca voda 150 g ryźa podľa chuti soľ, mleté čírene korenie, provensálske bylinky (zmes), sladká mletá paprika. Cukety umyjeme a spolu z kožou prerežeme na tri časti a následne rozštvrtíme.

Kuracie mäsko pokrájame na hrubšie rezančeky.

Vo väčšom hrnci zahrejeme olej a pridáme nasekanú cibuľu.

Cibuľu zľahka osolíme a orestujeme do sklovita. Potom pridáme lisovaný cesnak a minútku na to aj pretlak.

Do hrnca hodíme cuketové kúsky, soľ, korenie, mletú papriku a preovensálske bylinky. Chvíľu restujeme, pridáme konzervu pradajok a nakoniec všetko prelejeme vývarom.

Pridáme kúsky mäsa, ryžu (nepremytú), premiešame. Keď polievka začne vrieť, pridáme ešte hrnček horúcej vody, znížime plameň, hrniec prikryjeme a všetko spolu varíme asi 30 minút.

Občas premiešame, aby sa ryža neprilepila na spodok hrnca.

Polievku finálne dochutíme a podávame s nasekanou petržlenovou vňaťou alebo čerstvým koriandrom.

Príprava 20min Úprava 40min Porcie 10 INGREDIENCIE PALACINKOVÉ CESTO: 2 hrnčeky mlieko plnotučné 2 ks vajce 1 hrnček hladká múka 1 štipka soľ trochu maslo na smaženie trochu olej na smaženie MÄSOVÁ PLNKA: 2 PL olej 1 ks cibuľa 500 g mleté mäso (hovädzie) 2 strúčiky cesnak podľa chuti soľ, korenie, sušené oregano PARADAJKOVÁ OMÁČKA: 1 PL olivový olej 1 ks menšia cibuľa 2 strúčiky cesnak 2 PL paradajkový pretlak 1 konzerva lúpané paradajky 1 KL cukor podľa chuti soľ, korenie, sušená bazalka EŠTE POTREBUJEME: 70 g strúhaný parmezán. Na palacinky vyšľaháme mlieko s celými vajíčkami a soľou.

Metličkou zapracujeme múku, až kým nedostaneme riedke palacinkové cesto.
Náš tip
Suroviny na palacinky môžeme spoločne rozmixovať v mixéri, aby bolo 100% bez hrudiek. Alebo ho po rozmiešaní precediť cez husté sitko.

Palacinky opekáme na zmesi rozpáleného oleja (asi 1KL na palacinku ) a masla (1KL na palacinku) do zlato-hneda z oboch strán.

Hotové palacinky necháme bokom chladnúť.

Na mäsovú plnku si v hrnci rozohrejeme olej, pridáme nasekanú cibuľku, mleté mäsko a opekáme kým sa mäsko nezatiahne.

Mäso ochutíme prelisovaným cesnakom, soľou, korením a trochou oregana. Pridáme asi pol deci vody, zakryjeme pokrievkou a necháme podusiť na malom plameni asi 10 minút.

Mäso odstavíme z plameňa a pripravíme si rýchlu omáčku: v menšej rajnici rozohrejeme olej, pridáme nasekanú cibuľku, cesnak a necháme restovať asi 2 minútky.

Potom pridáme pretlak, paradajky, omáčku zľahka posolíme, okoreníme, zakryjeme a dusíme asi 15 minút.

Nakoniec dochutíme cukrom, odstavíme z plameňa a pridáme bazalku.

Palacinky plníme mäskom, rolujeme a ukladáme do menšieho, olejom vymasteného pekáčika. Prelejeme horúcou omáčkou, poprášime parmezánom a vložíme do rúry vyhriatej na 170°C na zhruba 25 minút.

Krémová polievka z pečených paradajok
Paradajky dostanú po upečení úplne nový chuťový rozmer. A keď ich rozmixujete spolu so smotanou, tak sa ocitnete v polievkovom siedmom nebi.
Príprava 10min Úprava 30min Porcie 0 INGREDIENCIE 6 ks paradajka 1 ks veľká červená cibuľa 2 strúčiky cesnak 3 PL olivový olej 1 KL kajenská paprika 1 KL cukor 1 PL balzamikový ocot 1 liter zeleninový vývar 200 ml smotana na šľahanie 100 g parmezán podľa chuti soľ, korenie. POSTUP

Rúru rozohrejeme na 180 °C.

Cibuľu a cesnak očistíme a nakrájame nadrobno. Paradajky aj so šupkou prekrojíme na polovice.

V pekáči alebo ohňovzdornom hrnci rozpálime olej a pridáme cibuľu a cesnak. Pridáme soľ, korenie, papriku, cukor a paradajky reznými plochami na dno. Paradajky opečieme, otočíme, pridáme ocot a dáme do rúry na 20 minút.

Opečené paradajky vrátime na oheň a zalejeme zeleninovým vývarom a privedieme k varu. Po zhruba 5 minútach rozmixujeme ponorným mixérom, pridáme smotanu, dochutíme a ešte minútu prevaríme.

Podávame zasypané najemno strúhaným parmezánom a s chrumkavou bagetkou.
